Cinnamon Pecan Energy Bites are a nutritious, heart-friendly snack. Dates provide natural sweetness and fiber, supporting digestion and stabilizing blood sugar. Ingredients
  

  • 1/2 cup medjool dates pitted and chopped
  • 2 Tbs peanut butter creamy
  • 1/2 tsp vanilla extract
  • 1 cup pecans raw
  • 1/2 tsp cinnamon ground
  • 1/4 cup oats quick-cook
  • 2 Tbs chia seeds
  • 1/8 tsp salt pinch

Instructions
 

  • Pulse dates, peanut butter, and vanilla in a food processor until paste forms. Remove from processor.
  • Combine pecans, oats, chia seeds, and cinnamon in a separate bowl. Add to the food processor and pulse until fine crumbs form.
  • Add date paste and pulse until dough forms. You can add a bit of warm water if the dough is crumbly.
  • Using a tablespoon, scoop dough into palms and squeeze to form balls [do not roll, as they may fall apart]. Repeat until approximately 12 bites are formed.
  • Dust with cinnamon and refrigerate for 30 minutes or more.

Notes

A serving is two bites. It provides 16 g of carbohydrates, 4g of fiber, and 4 g of protein.
