Cinnamon Pecan Energy Bites are a nutritious, heart-friendly snack. Dates provide natural sweetness and fiber, supporting digestion and stabilizing blood sugar. Pecans are rich in heart-healthy monounsaturated fats and antioxidants, helping to reduce LDL cholesterol. These bites also offer essential minerals like magnesium and potassium, which support heart health and muscle function.
Pulse dates, peanut butter, and vanilla in a food processor until paste forms. Remove from processor.
Combine pecans, oats, chia seeds, and cinnamon in a separate bowl. Add to the food processor and pulse until fine crumbs form.
Add date paste and pulse until dough forms. You can add a bit of warm water if the dough is crumbly.
Using a tablespoon, scoop dough into palms and squeeze to form balls [do not roll, as they may fall apart]. Repeat until approximately 12 bites are formed.
Dust with cinnamon and refrigerate for 30 minutes or more.
